Episode 3

Note: Takuan ( たくあん ) is yellow pickled daikon radish. It’s also called danmuji ( 단무지 ) in Korean. Takuan is crunchy and a bit sweet and is often served with onigiri as a side dish.

Note: Onigiri are snacks or meals made from rice and nori (dried seaweed) and are easily recognizable all over the world as Japanese cuisine, maybe because it reminds us of sushi. Although versatile (onigiri can have various fillings or toppings), onigiri are often seen as very simple and unremarkable. This Japanese staple is easily accessible because of its low cost as well as its availability in nearly every konbini (convenience store).

Girigiri’ is taken from the Japanese ぎりぎり, which means “barely”, “nearly not” or “almost”.
